Gooey Heavenly Coffee Cake

Coffee cake is like the perfect breakfast for get togethers. My besties and I were going to have breakfast and I thought this would be the perfect time for a Heavenly Coffee Cake. Being vegan and gluten free takes planning on my part, they offered to get together for breakfast and then I offered to make it. A win win there.

I really didn’t feel like going to a restaurant and do homework on what is available to me cause let’s face it, it is probably just fruit. Though I do love fruit 😉

I decided I was just going to make them breakfast instead. Now I am one to try to amaze people, I don’t do things like baking half heartedly. So I wanted the make a coffee cake and I wanted them to love it. I used my tried and true gluten free flour blend and made it vegan and let me tell you, oh son was it good!!

Fluffy Coffee Cake


  • 2 cups gluten free flour this mix seems to work great and fluffy
  • 1 cup gluten free oat flour (ground up oats in grinder)
  • 1 tsp xanthan gum
  • 1 cup vegan sugar
  • 1 Tbsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 7 Tbsp Earth Balance butter
  • 1/2 cup unsweetened applesauce divided
  • 1 cup almond milk
  • 1 Tbsp Apple Cider Vinegar
  • 1 chia egg (1 Tbsp ground chia 3 Tbsp water set aside)
  • 1 tsp vanilla
    Top Crumble
  • 1/3 cup Earth Balance butter, melted
  • 3/4 cup gluten free flour
  • 2/4 cup coconut sugar
  • 1 Tbsp cinnamon


  1. Preheat to 350 degrees. and spray 9x13 inch baking dish.
  2. Sift flour, xantham gum, sugar, baking powder, baking soda and salt to gather in a large bowl.
  3. Blend it the cold butter with a fork or pastry cutter. It will be dry add 1/4 cup unsweetened applesauce. This should make it more wetter.
  4. Then measure out the milk add the apple cider vinegar and vanilla it will start to curdle.
  5. With an electric mixer add chia egg and remaining 1/4 unsweetened applesauce.
  6. Pour milk mixture a little at a time until resembles a cake batter, you may not use all the milk.
  7. Pour in pan.
  8. In a medium bowl mix flour, sugar and cinnamon.
  9. Add melted butter and beat until crumbly then spread over top.
  10. Bake for 40-45 minutes.

This Heavenly Coffee Cake was so yummy! It was light and airy and fluffy just like a cloud, therefore it is heavenly. My friends loved it, my son loved it and my long time friend & hair dresser loved it. One even wanted the recipe & they are non believers aka non vegan gluten lovers. My husband of course almost ate a whole pan by himself 😉 he is my biggest fan!

My goal is to change the closed minds of the world and my goal was accomplished. From the mouth of Danielle Daugherty “Is this what vegan tastes like?” when my son was like yeah that makes me feel so good. It means I’m making nonbelievers believe they won’t miss out.

Before I went gluten free vegan, I was a great cook and people loved my cooking. Once I changed there was a small part that was sad that I may no longer be known as a great baker and cook. But when I still get applause for my cooking it feels amazing!

UPDATE: Don’t use extra oatmeal in place of flour unless you like it heavy and dense, the gf flour blend I use seems to be a very good mix.

  2. You are definitely not lying! This coffee cake was truly heavenly! I think I could’ve eaten the whole cake! And now that we are talking about it, I am craving more! Alas, since you live 1,000 miles from me, I will have to make it myself 😉
