Cookie Chia Overnight Oats

There is nothing better than having your breakfast already made. All you need to do is just grab it and go. When it’s healthier you that is a plus also. Cookie Chia Overnight Oats is amazing, I cannot tell you how good these are. I get so excited for breakfast.

I make 2 at a time because I am not sure how it would hold up after 2 days. Just mix it up and slice a banana on top of my oats. I don’t know about you but I’m in a hurry in the mornings. So I just prepare the night before and wala, just grab and go!

I like to use PB2 as my protein because it’s low in calories with all the peanut butter punch. Of course if you are wanting a more all natural version just use the same amount of any nut butter you want it’s totally up to you. Here’s my process:

I mix up the cookie dough part which is so superbly yummy. It blends up into a perfect yummy little peanut buttery blob. I just drop it into my jar like so. Be careful not to lick your finger, you maybe tempted to eat.

I love jars I save them with their lids and they make the perfect overnight oat jars and it didn’t cost anything. Except the purchase of the jelly or sauce but you were buying it anyways. Just keep them, one purchase a gajillion uses!

Then I mix up the oats, pour on top then cap it and put it in the refrigerator. It’s that easy even a caveman could do it 😉 Just wait until you eat it in the morning you’ll probably dream about it, just a warning. Just stir it up and I like a banana sliced on top but you can add whatever you want. The little surprise cookie dough at the bottom is like the surprise chocolate ending on a drum stick.

Yield: 1


    Cookie Dough
  • 2 Tbsp plain PB2 or any nut butter
  • 1 Tbsp Coconut Sugar
  • 1/4 tsp cinnamon
    Chia Oats
  • 1/2 cup gluten free oat meal (quick cook or normal have worked for me)
  • 1/2 cup almond milk
  • 1 Tbsp whole chia seed
  • 1/4 tsp cinnamon
  • 1 Tbsp maple syrup


  1. Prepare the PB2 as directed on the canister until you have a creamy peanut butter or use your nut butter of choice.
  2. Mix in the sugar and cinnamon, dollop into jar.
  3. Then mix up your oats and pour on top.
  4. Seal it and put in fridge allow to sit overnight.
    You can do however many you want but I've only done 2 at a time so I know after 2 days it's still very yummy!

This is my go to breakfast right now!
