I have tried every gluten free flour blend out there and it is all good. Premix is awesome because you don’t have to buy all the separate flours out there. I am a freak and I like to make it a challenge, mixing them is fun to me. I’m like an not so evil mad scientist that loves to wow people when my gluten free foods that are not gritty, like many have come to know.
Depending on what type you are looking for, this had no grit but if you like to stay away from rice as much as possible like us. I use Bob’s Red Mill Sweet Sorghum in it’s place. You can use either one or use a mixture, it’s your lab do what you want.
With this mix I have made light and fluffy Chickless and Dumplings. This made the best dumplings ever, I even prefer them over regular dumplings. I used the rice flour in this mixture, so here it goes what I used to make heavenly fluffy non gritty gluten free flour.
I also made this amazing coffee cake and cinnamon roll cake which I am posting soon. So far this seems to be an awesome fluffy cake or bread like substitute. I did use this mixture in a cinnamon roll dough and it didn’t seems to rise. As a cake or dumpling like recipe it is perfect. When I find a perfect mix for cinnamon rolls I’ll let you know.
I do love to use oat flour I grind myself, which you will find a lot in my recipes.
