Pumpkin Spice Pancakes

Everybody loves pumpkin, you can have pumpkin everything, so how about Pumpkin Spice Pancakes.

Oooh my goodness these were so yummy!! Alright so here is the scoop, we live our lives for Friday because it is pancake Friday in my house. It’s Fall also so everyone is bringing out the pumpkin spice everything. I had some homemade pumpkin puree in the freezer, so I threw that in my pancakes. I put my thinking cap on and wala we have pumpkin spice pancakes. We have been watching our calorie intake to make sure we aren’t eating too much but eating enough food, we want to maintain our weight. Let me tell you it’s a chore but we are doing it 🙂

So I was entering the recipe to get the calories and the oat flour was less calories than a gluten free blend. But in all fairness to our beloved gluten free flour, me being me I entered it wrong so it was about the same calorie wise. So if you want to take the easier route and use a gluten free flour, just switch out the oat flour. Or for a regular pancake recipe try this one😉

I made up this recipe to be less caloric but it’s not so much. Oh well we still had enough calories left to devour and double the batch. Then make big ole pancakes, these actually get very fluffy and are filling you will love these.    

Mix all dry ingredients in a bowl with a whisk to get incorporated. Then whisk wet ingredients in until well mixed and no lumps.

In a hot pan or griddle ladle out little pancakes or big pancakes we like ours huge. Flip after the edges start to look done and then cook for another 5-6 minutes.

Pumpkin Spice Pancakes


  • 2 cups gluten free oat flour (grind your own)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 Tbsp coconut sugar
  • 1 cup plant based milk** ( plus more if too thick)
  • 4 tsp Apple cider vinegar**
  • 1 cup pumpkin puree
  • 1 tsp vanilla


  1. Grind your own flour by putting your oatmeal in a grinder.
  2. Make your butter milk by adding apple cider vinegar to milk and allow to curdle.
  3. Mix all dry ingredients now add all wet ingredients.
  4. Mix to pancake consistency.
  5. Now pour on to hot griddle and make your pancakes however big you want.

These were so amazingly wonderful it put me in a festive spirit and to know there is no allergens makes it even better!! If you try this recipe let me know if you love it or hate it! I can take it!!
